Steve Brill's Creamed Wild Spinach.


6 cups lamb’s-quarters, chopped ( or any other Spinach, wild or otherwise)

6 tbs. silken tofu (available in health food stores and some supermarkets)

6 tbs. water

6 tbs. corn, olive, or flaxseed oil

4 tbs. lecithin granules (available in health food stores)

1/2 tbs. arrowroot powder

1/2 tsp. liquid stevia (available in health food stores)

8 cloves of garlic, peeled and sliced ( fry these first )

1/2 tbs. salt ( I used less plus I added a little veg stock and soy to Steve’s recipe )

1/2 tsp. black pepper, ground

1/2 tsp. nutmeg, ground


Purée the water, tofu, corn oil, lecithin, and stevia in a blender.

Combine with the remaining ingredients in a saucepan.

Cover, and cook over low for heat 5 minutes, or until just wilted.
