It’s a big list but you can change it around depending on what you have available, miss things out, add others. Also you can decide how finely to chop the ingredients depending how smooth or rough you want the final chutney to be.
3 lbs of apples chopped into small pieces
1 lbs of fresh tomatoes, chopped
2 peppers/capsicum, chopped
4 medium sized plums, chopped
8-10 cloves of garlic sliced or chopped
4-6 fresh medium size, medium heat, green chillies including seeds, chopped
1/2 lbs of red raisins or similar
1/2 lbs of golden sultanas
1/2 lbs of black raisins
A big handful of dried mulberries (optional)
1 lbs of brown sugar
2 pints of vinegar (just the cheap stuff)
2 tsp of salt
2 tsp of fresh ground pepper
2 tsp of cayenne pepper
4 tsp of star anise ( needs to be ground up)
2 tsp of dried Turkish chilli flakes or similar
2 tsp powdered cinnamon
2 tsp of paprika
1/2 tsp of smoked paprika
2 tsp of ground coriander
Chop what needs chopping and put all the ingredients except the vinegar and sugar into a pan to cook for 30 minutes. Add half a cup of water if needed.
Add half the vinegar and cook for a few minutes until the apples are cooked properly, then add the rest and all the sugar and simmer for around 2 hours.
Leave to cool and store in sterilised jars. Job done.
Each time I make this I change the recipe and generally make it spicier than the previous time, so perhaps split the batch in two and try making half more spicy and one half less spicy than my version.
